Weight Loss Veggie Soup
I know I know.. it’s 90 degrees out, but this soup is just too good to not make once before you make it 1,000 times this fall and winter!
It has little to no carbs in it and you ca mix and match any veggies and proteins you want. I will give you some different additions at the end but first I will tell you what I did.
NOTE: This soup won’t magically make you lose weight but it it a super healthy soup to eat WHILE you’re working out and eating healthy!
Ingredients:
* 1lb ground turkey
* 1/2 a small onion chopped
* 2 garlic cloves
* 4 cups cut cabbage (about 1/2 a head)
* 1 cup green beans (I used frozen)
* 2 bell peppers cut up ( red, yellow, orange you choose)
* 2 14.5oz cans of Italian style diced tomatoes
* 6 cups beef broth
* 2 bay leaves
* 2 1/2 tablespoons Italian seasoning
* 1 tablespoon basil
* salt and pepper to taste
* 3 cups of broccoli florets
* 1 sliced zuchini
* 1 sliced squash
Directions:
* Brown ground turkey in separate frying pan
* Add garlic and onion to large pot and cook on medium until slightly soft.
* Add cabbage and green beans and cook for an additional 5-7 minutes
* Stir in peppers, cans of tomato, broth, seasoning and bay leaves and let simmer for about 7 minutes
* Add zucchini, squash, broccoli and the cooked ground turkey
* Allow to simmer for another 5 minutes remote bay leaves and serve!
Additions and subtractions is desired:
* You can go vegetarian and don’t add meat
* Add spicy sausage
* Add ground turkey
* Add corn
* Add potatoes
* Add carrots
* Replace cabbage with spinach or kale
* You can also cook this is a crock pot for 5 hours.
