The next addition of 'Quarantine Cooking with Aimee' is a quick healthy protein.  You are more than welcome to use these as an appetizer or add brown rice and green beans and make it a dinner! They were so good. Hubby had 5.

ingredients for meat balls:

  • 1 lb of lean ground turkey
  • 1/2 finely chopped yellow onion
  • 4 garlic cloves minced
  • 1/4 cup panko bread crumbs
  • 1/4 cup Italian seasoning
  • 1 teaspoon chili powder
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon red pepper flakes
  • sesame seeds (just because they looked good on top) not necessary

ingredients for sauce:

  • 3 tablespoons honey
  • 1 teaspoon apple cider vinegar

instructions:

  • Preheat oven to 350 degrees F.
  • Line baking sheet with tin foil spray with nonstick (easier clean up)
  • In mixing bowl, combine turkey, onion, garlic, bread crumbs, Italian seasoning, chili powder, cumin, paprika, salt and red pepper flakes. Mix well!
  • Form meatballs (I did medium to small ones) and place them on baking sheet.
  • Bake meatballs for 15-20 minutes. (I am weird about meat so I choose to over cook.. I did 20 mins lol)
  • In a small bowl whisk together the honey and apple cider vinegar.
  • Brush the meatballs with the mixture and return to over for another 2 minutes.
  • ENJOY :)
