Low Carb Spaghetti Squash Boat
This recipe looked intimidating to me for some reason, but it was really easy.
A tip that I have learned, so you aren’t running around the kitchen aimlessly, is have all the ingredients out and on your work space. Get everything ready before hand.
ingredients:
- 1 spaghetti squash (halved lengthwise and seeded)
- 1 lb ground turkey (you can use ground beef if you want or even chicken breast)
- 1 tablespoon EVO
- 1 bunch of broccolini, chopped
- 4 garlic cloves (minced = 1 to 1 1/2 teaspoon)
- 1/4 teaspoon crushed red pepper flakes
- 2 tablespoons of water
- 1 1/2 cup of mozzarella cheese (divided)
- 1/2 cup Parmesan cheese divided
- 3/4 teaspoon Italian seasoning
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
directions:
- Preheat your oven to 450 (one rack on top and one on the bottom)
- Microwave squash halves (cut side down, on high, uncovered with some water for 10 minutes)
- Cook broccolini in olive oil in skillet with red pepper flakes and garlic (about 2 minutes) add water and continue to cook.. stirring until the broccolini is tender (about 3-5 minutes)
- Brown the ground turkey in separate skillet
- Scrape the squash from the shells and set the shells on a baking pan or baking sheet
- Place the squash, broccolini, and ground turkey in mixing bowl and mix in 1 cup of mozz cheese, 1/4 of the parm cheese, salt, pepper, and Italian seasoning. MIX WELL
- Divide the mix between both shells and top with remaining cheese.
- Place on bottom rack for 10 minutes
- Move to top rack and BROIL for 2 minutes to brown cheese.
